Spaghetti with Ricotta, lemon & herbs

Ingredients:

  • 500g Spaghetti
  • 300g Ricotta, drained
  • 1/2 cup Pecorino or Romano, grated
  • 1/2 cup herbs (any mix of parsley, oregano or basil)
  • Zest of 1 lemon
  • 2 tablespoons extra virgin olive oil, plus a drizzle at the end
  • Sea salt
  • Freshly ground black pepper to season
