Spaghetti with Ricotta, lemon & herbs
Ingredients:
- 500g Spaghetti
- 300g Ricotta, drained
- 1/2 cup Pecorino or Romano, grated
- 1/2 cup herbs (any mix of parsley, oregano or basil)
- Zest of 1 lemon
- 2 tablespoons extra virgin olive oil, plus a drizzle at the end
- Sea salt
- Freshly ground black pepper to season
