Cheesy Muffins

Makes 12 – 16 muffins

Ingredients:

  • 1 ½ cups self raising flour
  • 1 grated potato
  • 1 grated carrot
  • ½ grated zucchini
  • 1 cup grated Romano cheese (plain or flavored), plus extra
  • 2 eggs, beaten
  • ½ cup milk
  • 1/3 cup olive oil
  • Salt & Pepper

Method:

  1. Preheat oven to 180 ºC.
  2. Grease muffins trays.
  3. Beat flour, eggs, milk and oil until combined.
  4. Fold in the grated vegetables and cheese and salt and pepper.
  5. Spoon the mixture evenly into the muffins holes and sprinkle with extra grated cheese.
  6. Bake for approximately 40 minutes until golden brown.

Alternative:

  • Add 2 rashes diced bacon
  • Subtract the vegetables, add another cup of cheese and chopped chives or parsley
