Cheese Puffs

Makes 36


  • 4 x Sheets Puff Pastry
  • ½ cup of Milk
  • Sesame Seeds


  • 300 grams Ricotta (Drained)
  • 150 grams Fetta (Grated)
  • 150 grams Pecorino or Parmigano (Grated)
  • 50 grams Pine Nuts (Roasted)
  • 1 egg (Beaten)
  • Salt & Pepper to season


  1. Grease large baking trays.
  2. Combine all filling ingredients in a bowl.
  3. Cut each sheet of pastry into 9 squares.
  4. Place a tablespoon of the mixture into one corner, of one cut square of pastry.
  5. Then fold the square with the filling over into a triangle, and seal with the edge of a fork, and poke the fork into the middle of the triangle once.
  6. Repeat this step with all the squares of pastry.
  7. Place them all on greased trays.
  8. Brush each one with milk and sprinkle with sesame seeds.
  9. Put in oven at 200ºc and bake until golden brown.


Minus the pine nuts and add, finely chopped spinach or rocket.
